SKIN FOOD: LAYERED CHOCOLATE PUDDING

Celebrate Valentine’s with a healthy but sweet layered chocolate treat - one for you, one for that special someone. This easy to make pudding from Foodin is made with berries, chia seeds and almond paste, containing some lovely skin boosters. Berries are rich in anti-oxidants and vitamin C, while chias are an excellent source of protein, fiber and fatty acids. Almonds are high in proteins too, and also contain vitamin E and calcium. All three are great for both your gut and skin.



Ingredients:

Top layer

1.5 dl frozen or fresh berries

2 tbs chia seeds

0,5 dl water

Middle layer

Fridge-cold coconut milk

Bottom layer

2 tbs chia seeds

1.5 dl water or plant-based milk

Chocolate protein powder, dairy or vegan, according to taste

Almond paste according to taste

1 small banana

How to:

Top layer

  1. Let berries defrost to room temperature and prep bottom layer (see below).
  2. When defrosted, mash berries with a fork, mix with water and chias and stir thoroughly. Allow to swell for at least 30 mins.

Bottom layer

  1. Mix chias with either water or plant milk. Allow to swell for at least 30 mins.
  2. In a blender, mix the chia and water/milk blend with the protein powder, almond paste and banana to a smooth consistency.

Middle layer

Pour away any excess water from the coconut milk, leaving the creamy part intact to use as one layer of the pudding. For a softer consistency, shake the coconut cream can to mix the firm and liquid components of the milk.

To assemble: divide bottom layer into two glasses, follow with middle layer and then top layer. Serve immediately.
