Skin food: Layered chia pudding
Boost your weekend with a nourishing vegan breakfast! This dairy and gluten free chia pudding by Foodin is packed with vitamin C and can easily be adjusted with your favourite fruits and berries.
3 tbs chia seeds
3 dl coconut milk
½ tsp vanilla powder
(2 tbs honey or coconut sugar if you prefer)
100 g frozen bucktorn
3 tbs coconut manna
½ tsp powdered ginger
½ tsp powdered turmeric
(1 tbs honey or coconut sugar if you prefer)
1. Make the chia pudding my stirring together the coconut milk, chia seeds, vanilla and sweetener of your choice.
2. Let the pudding set in the fridge for at least 15 minutes or over night. Keep stirring every now and then in the beginning to get a nice texture.
3. Make the filling by mixing the orange, bucktorn and coconut manna in a blender.
4. Layer the chia pudding and the filling in a glass and decorate with passion fruit, goji berries and fresh mint.
