Skin food: Strawberry and quinoa salad with feta cheese

Stay fresh in the summer!This beautiful strawberry and quinoa salad with feta cheese by @tuuliatalvio and @foodin is not just a great holiday lunch - it's also packed with things your skin is bound to love, like antioxidants, vitamins and fibre.

If you want a more filling version, add avocado or substitute the cucumber with grilled zucchini. Remember to mix the dressing into the quinoa, so that the salad stays fresh.

Recipe is for four persons

2 dl of quinoa
Ca. 70 g of baby spinach
1/2 cucumber
1/2 l of strawberries
1/2 dl of pine nuts  
1/2 dl of pumpkin seeds 
Ca. 100 g of feta cheese
A handful of fresh basil
A handful of fresh mint

Quick herb dressing:
1/2 dl of olive oil
2 tbsp of apple cider vinegar
A handful of finely chopped basil Salt and pepper


  1. Boil the quinoa as directed on packaging and prep the other ingredients meanwhile.
  2. Rinse the spinach. Halve the cucumber and cut out the soft middle. Slice the cucumber. Gut the strawberries and cut into pieces. Rost the pine nuts and pumpkin seeds in a hot frying pan. When the quinoa is done, let it cool for a while and season with salt.
  3. Measure all dressing ingredients into a small bowl and mix well. Pour the dressing over the quinoa and mix well. On a large bowl, lay out the spinach, quinoa, cucumber and strawberries. Finish with the feta cheese, the pine nuts and pumpkin seeds and the fresh basil and mint. Serve and enjoy!
