Skinfood: Lucuma lingonberry fudge

This sweet lucuma lingonberry fudge by Foodin features a berry that's familiar to all of us in Finland. Lingonberry has a long history in Finnish cuisine, and for a good reason: it's packed full of vitamins and antioxidants, with a multitude of health benefits. Lucuma, also knows as Inca gold. is a South-American fruit with a delicious slightly sweet-meets-sour flavour and is a good alternative to traditional sweeteners. The recipe makes about 20 pieces and requires 20 minutes of prep time.

INGREDIENTS

1 dl raw cocoa butter

0.5 dl of coconut oil

0.5 dl lucuma powder

1 tbsp liquorice root powder

1 tbsp coconut nectar

A handful of fresh lingonberries

For garnish:

A pinch of sea salt

A pinch of cinnamon

 

HOW TO

Melt all ingredients except the berries in a water bath and mix thoroughly.

Pour into confectionery molds and drop a few lingonberries into each mold.

Freeze for about 15 minutes or refrigerate for about an hour. Sprinkle with cinnamon and sea salt before serving.
